Eggplant Omelet (Tortang Talong)

Here's what I had for breakfast.....tortang talong anyone?

· 2 to 4 talong (eggplants), average size
· 2 to 3 eggs, beaten
· salt and pepper, to taste
· oil/butter for frying
. scallion
. salted ground crackers

1. Broil eggplants until tender (the skins are charred and blister appears).

2. Once cool, peel off the skins of the eggplant and retain the crown and the stem. Gently flatten its meat by using the back of a fork. Set aside.

3. In a bowl, beat the eggs and season with salt, add pepper, scallion, and ground crackers.

4. In a skillet, heat oil over medium heat. Dip each eggplant, one at a time into the egg mixture. Gently bring the bowl near the skillet and tip, lowering the eggplant onto the heated oil.

5. Fry until golden brown on one side, then turn and brown the other. Drain on paper towels. Keep warm and serve.

wow salted crackers, pwede pala yun? Mang iba iba talaga ang ways ng pagawa ng torta ako kasi may kamatis and bacon pa eh...

Wow, paborito ko yang tortang talong. Gustomg gusto ko talagang magluto niyan kaya lang wala kaming ihawan. Hindi naman masarap kapag nilaga lang yung talong bago itorta kasi bland ang dating. Pero napakaganda talaga ng food preparation mo. Lahat nang pagkaing pinifeature mo ay mukhang napakasarap. Kain na lang tayo ng Blue Bunny banana split ice cream para lumamig ang ulo natin at makalimutaan natin ang problema natin, hehehe, lol. Tabi, tabi po, joke lang, lol. Thanks for the post. Hello Dhemz. I love tortang talong. I miss it na nga eh. I am lazy to broil the talong kaya I ended up ginisa na talong nalang. Hope I can do it one day specially sa time nga magsinugba me para isa ra ang trabaho paglimpyo sa sugbahanan. How are ou na my dear friend? It's been awhile na jud nga wala nako nakavisit nimo. Hope everything is okay.

i never had tortang talong here... hubby doesn't like this or any talong.... pero alam mo we cook pakbet (minus the bagoong) so it was more of sauteed veggies naku kumain ba naman ... ewan ko sa asawa ko parang eng-eng!

Favorite koto tsang, pero lang never tried it here yet ky ilang talong makabuang sa kadako hehehehe.

Dili ko ka hurot sa perting kadako sa ilang talong, lami ning imuha da. chef jd ka tsang da, kamao mangluto preha lulu ug cecile ug rose. ako kamao ug kaon waaaaaaaaaaaa
