Pork and Chicken Adobo with Eggs

Pork and Chicken Adobo with eggs is one of the traditional menus you can find in the Philippines. When I was in college I always order this for lunch because it is very tasty and it has a lot of meat...lol!
(to make yourself droll, just enlarge the photo...lol)

This is my very first attempt. I am so happy that I did it right. So yummy so tasty! Would you like to try this in your kitchen? Here is the recipe.

* 1 1/4 pounds boneless pork loin roast, cut into 2-inch pieces
* 1 1/4 pounds boneless, skinless chicken breasts, cut into 2-inch pieces
* 3 tablespoons salt
* 1 tablespoon black peppercorns, coarsely ground
* 2 tablespoons crushed garlic
* 2 bay leaves, torn
* 1 cup white vinegar
* 1/4 cup soy sauce (optional)
* 1 tablespoon vegetable oil
* 2 cloves garlic, smashed
*sliced onion
*red pepper
*scallion
*boiled eggs (you can add as many as you want)

DIRECTIONS

1. Season pork and chicken with salt and pepper and place in a stock pot. Rub with crushed garlic and torn bay leaf, and coat with vinegar (and soy sauce, if using). Cover, and marinate in the refrigerator for 8 hours, or overnight.

2. Bring meat and marinating liquid to a boil. Reduce to a simmer and cook for 1 1/2 hours, or until meat is fork-tender. If necessary, add a small amount of water to prevent drying out.

3. Strain liquid from meat. Return to the stock pot and bring to a simmer. In a skillet, cook and stir meat in 1 tablespoon of oil over medium high heat until brown on all sides, adding remaining 2 cloves of smashed garlic in the last 3 minutes. Add meats to cooking liquid, and continue simmering until slightly thickened. Add the eggs. Serve with rice.

oh my gush at ako ay napalunok for sure masarap ito. ako basta adobo as in nakalimotan ang diet hehe. lam mo ba dhemz na itong adobo ang isa sa mag like nang mga kano? try mo e-serve pag may party ka dyan at talagang hahanaphanapin yan, copy ko ha recipe mo thanks my dear! missed yah!

Namnam kalami ani tsang grabe mura 2 ka cups nga rice ako mahurot basta kini ako sud an nya coke dayon wooow tug ab jd sa kabusog. mga ingon ani kadaghana nga pork and chiken kausahon ra kaon sa akong jose as in. basta hinay hinay ko kaon 3 ra ka pieces bilin sa akoa mao maniguro ko ug butang daghan ako plato oi.

Paki meat mn kaayo ni ato pares gd. fried jd iya fave. Balik lng ko lili dri ugma sa imung adobo tsang ky si justine ay mura nakiglayog bisag gikugos na, lami kusion lol. muah ko sa imu beauty kulot.

wow CPA with eggs pa...paborito ng bayan...sus mag luto tawon ko ug CPA (without egg), di li nako kaonon ang chicken kay naa man ko allergy sa chicken, pero kung di ko kaagwanta ug tan-aw, ako jud kaonon bahala ug mangatol hehehehe..kalutoon noon ko ug CPA dah!

BTW. wala pa tawon ko kapa ibot ngipon kay ga hubag pa man. gitagaan ra ko tambal sa dentist for 3 days dayon kay nag mens man ko, bantog sakit kaayo ako ulo yesterday, nya kay dili man ko mo inon ug gamot pag naa sa akoa kay mo undang ako mens, so paabot na lan ko ani next week inig human sa ako mens ug wala na sad mag hubag ang 2 ka ngipon....ang usa kay nahingo man kay gipaak nako ug bayabas nga hilaw hilaw pa, sus nahingo noon, nya naa man natung-an sa hingo ug 2 ka daut na na jacket so 4 jud ako ipa ibot...nyahaha...pangag sa ko ani for a couple of weeks kay di man ko mag pataud dayon aron dili mag sige ug balik balik sa dentist kay miluag na sad...hay ka faet...

b4 ko maka limot, naa diay ni award kani nga blog hahaha.

well sa midterm nimo..ah... 'la yan...yakang yaka yan...kahuman ba diay ta ug koleheyo kung mga bulokers tang pinoy...hahaha

Yes, yan ang madaling lutuin kaya lang mas madaling lumambot ang manok kaysa sa baboy kaya pag pi nalambot mong mabuti ang baboy ay sobrang nalalagas ang manok. Ang secret siguro dito ay unahing iluto ang baboy at pag semi tender na ay isunod ang manok. Napakaganda mo talagang mag present ng cooked food sa dining table. Ang ganda ng arrangement, parang sa isang 5 star restaurant. Thanks for the post. God bless you always.

Suggestion: you can lessen the sarsa next time and wrap everything, including the eggs, inside a banana leaf. Use a string made out of the same banana leaf and serve it. I call it the Lovely Adobo Surprise.
