Meatballs on Ciabatta

A blend of oil, lemon juice, parsley, and garlic freshens up classic meatballs. Crisp lettuce and toasted ciabatta bread complete the meal.

Ingredients

  • 1/3 cup extra virgin olive oil
  • 1/4 cup lemon juice
  • 1 bunch Italian (flat-leaf) parsley, large stems removed
  • 2 cloves garlic
  • Salt and ground black pepper
  • 1 16- to 18-ounce package frozen cooked Italian-style meatballs, thawed*
  • 1/2 of a small head romaine, cut-up or torn
  • 6 ciabatta rolls, split and toasted

Directions

1. In a food processor or blender combine oil, lemon juice, parsley, and garlic; cover and process until finely chopped. Add salt and pepper to taste.

2. Transfer parsley mixture to a large skillet; add meatballs and heat through, covered, over medium heat, stirring and spooning sauce over meatballs occasionally.

3. Place one ciabatta roll, toasted side up, on each plate. Top with shredded romaine. Remove meatballs from skillet with a slotted spoon; place atop romaine. Drizzle warm parsley mixture over meatballs. Makes 6 servings.

My kids love meatballs. And it's good to try your recipe. I'll modify some ingredients specified here though such as parsley. My kids don't like its smell. I love it though.

Ang ganda at mukhang napakasarap nang meatballs na ito kaya lang ngayon ko lang nadinig yung ciabatta bread. Italian ito ano? Hindi ko na siguro matitikman yung ciabatta bread na yan. As usual mukhang very yummy yung presentation mo nang dish na ito. Thanks for the post. God bless you all always.

sounds like pampabata tong recipe na ito ah hahaha joke lang bakla hehehe gusto ko ko lang mawala tong aking migraine wahhhh.. nawala na fevah ng mga bata, kahapon nagduduwal naman tapos ngayon pururot naman wahhhh.. ano ba itis... i think they got food poisoning from the party we wnet to the other weekend..
