
Roasted Pigs/ Lechon
In the Philippines, lechon is an important dish at many fiesta occasions or any special occasions. These 3 roasted pigs was served during my grandparents 50th wedding anniversary. Oh, I so miss the crispiness of the skin and the aromatic smell of ribs...yummy!
What is lechon? Lechón is a popular cuisine in the Philippines, Cuba, Puerto Rico, the Dominican Republic, other Spanish-speaking nations in Latin America, and Spain. The dish features a whole roasted pig cooked over charcoal. Nowadays in most of Latin America, the original use of a suckling pig has given way to a medium-sized adult pig.
